Colours are not only a part of festival or clothing etc, but in foods as well they are not only lovely but also have an immense nutritional benefit.
It’s said our plate should look like a rainbow.
Luetin a yellow colour found in most fruits and vegetables is a very good antioxidant, helps to prevent macular degeneration and to improve immune function of the body.
Lycopene in tomatoes is great for heart and helps reducing heart diseases and is anticancerous.
Beta carotene are also present in carrots, papayas and mangoes are also great antioxidants
Purple pigments in eggplant and blueberries are due to anthocyanins and they are anticancerous and very high in antioxidants.
Green colour
vegetables are rich in vitamin C, folate and potassium which are not only powerful antioxidants but are also very powerful blood pressure reducers.
So eating the rainbow out of a plate is the key.
And let’s pledge on Holi to play with colors even in our plates
