Panch Phoron Tarkari?

Ingredients

  • 8 1 cup Pumpkin
  • 8 1 big Potatoes
  • 8 2 big Brinjal
  • 8 2 Dry Red chillies
  • 8 4 medium Green chilies
  • 8 3 small Bay leaves
  • 8 2 tsp Panch Phoron
  • 8 2 tbsp Oil
  • 8 Turmeric powder a pinch
  • 8 1 cup Milk
  • 8 Salt to taste

Method

  • Heat the oil in a non stick pan, add the panch phoron, after couple of minutes, add dry chilies, green chilies, bay leaves. Saute for couple of minutes.
  • Add the cubed vegetables and mix well. Simmer with lid covered.
  • Add turmeric and mix thoroughly. Now enough water and add milk to cook the vegetables.
  • Simmer till vegetables are tender and the water is absorbed. Add the salt finally and adjust the spice.
  • Serve hot with rice or poori. ?
